Ricardo “Ricky” Lopez – Executive Chef
Executive Chef Ricardo Lopez, a graduate of the University of Puerto Rico, is a focused professional who possesses many culinary art talents, including being an accomplished ice sculptor. Chef Ricky is regularly featured on local morning TV Shows demonstrating his unique pumpkin carving skills at Halloween and ice sculptures during the holiday season. When he is not competing in ice carving competitions, Chef Ricky enjoys volunteering with Habitat for Humanity.
Chef Ricky began his culinary journey at Universal Orlando Resort™ apprenticing under Chef Raffy Pambuan while also training at Chefs De France in the World Showcase at Epcot® in Walt Disney World®. Over the next couple of decades, Chef Ricky would travel between Puerto Rico and Florida to work at San Juan Hotel & Casino, Caribe Hilton, Fontainebleau in Miami Beach, Gaylord Palms Resort & Convention Center, Royal Pacific Resort, and Omni Orlando Resort at ChampionsGate. During this time, Chef Ricky trained under many chefs, including Chef Hiroshi Noguchi at the Renaissance Hotel.
He joined Rosen Hotels & Resorts in 2018 as Rosen Shingle Creek’s Café Osceola Chef, then advanced to the Executive Sous Chef position at Rosen Plaza in 2016. A strong believer in training and development, Chef Ricky has used his organizational skills to improve the efficiency and performance of his department and team. Chef Ricky’s passion for knowledge keeps him current on the latest culinary trends as he incorporates fresh ingredients and new flavors into our menus. He has led all food production efforts associated with kosher and holiday events. His latest promotion to the position of Executive Chef at Rosen Plaza recognizes his dedication and commitment to provide outstanding service.
